How to make delicious and easy homemade yogurt from fresh milk and condensed milk

Yogurt is a healthy product, especially for the intestines and digestive system. Besides store-bought yogurt, you can totally make it at home because the process is not complicated at all. Let’s take a look at AVAKids’ article on how to make yogurt from condensed milk and fresh milk right below!

1What is Yogurt? Composition and Nutritional Value of Yogurt

Yogurt is fermented from cow’s milk thanks to the lactobacillus bulgaricus and streptococcus thermophilus bacteria. Specifically, the lactose in milk is converted by bacteria into glucose – a simple sugar. Glucose is then converted into malic acid and then into lactic acid, the acid that creates the sour taste of yogurt.

Yogurt is a product containing a high level of nutrients, supporting intestinal health improvement. Yogurt contains many beneficial nutrients such as protein, amino acids, leucine, carbohydrates, lipids, minerals, and vitamins B, vitamin A, etc.

Besides, yogurt also provides the body with a large amount of beneficial bacteria like lactobacillus acidophilus and bifidobacterium. These are bacteria that live in the intestines and are beneficial to humans. They help improve digestive health, boost immunity, and prevent constipation.

2How to Make Yogurt from Condensed Milk and Fresh Milk

2.1. Traditional Yogurt

Ingredients:

  • 1 can of condensed milk.
  • 1 cup of yogurt (starter culture).
  • 500 ml of fresh milk.
  • 15 small glass or plastic jars.

Instructions:

  • Step 1: Prepare a pot, pour all the condensed milk into it, then use the empty condensed milk can to measure boiling water and cold water in a 2:1 ratio, then pour into the pot and stir until dissolved. Next, add 500ml of fresh milk and stir well.
  • Step 2: Place the pot on the stove and heat to about 80 degrees Celsius. When the milk starts to simmer, turn off the heat and let it cool.
  • Step 3: When the milk has cooled, add the yogurt starter and stir well. Absolutely do not add it while the milk is still hot as it may kill the culture. Then pour the mixture into small jars and incubate.
  • Step 4: Incubate the yogurt.

3How to Incubate Yogurt

Incubating with a rice cooker: Place the yogurt jars in the rice cooker, slowly pour warm water up to about 2/3 of the jars, close the lid, and press the cook button. Incubate like this overnight, then take the yogurt out and refrigerate for later use.

Incubating yogurt with a styrofoam box (cooler): Similar to incubating with a rice cooker. Arrange the yogurt jars or bags neatly and pour warm water up to about 2/3 of the jars (bags). Close the lid tightly and incubate overnight for 7-8 hours.

Incubating yogurt with a specialized yogurt maker: Pour the yogurt into cups and place them in the yogurt maker, then turn on the option according to each maker. The incubation time is 4-6 hours in summer or 6-8 hours in winter.

4Ratio of Condensed Milk and Fresh Milk for Smooth and Thick Yogurt

  • For smooth, thick yogurt, you can use a ratio of 1 part sweetened condensed milk and 3 parts unsweetened fresh milk. For example, 100ml of condensed milk combined with 300ml of fresh milk will produce a sufficient amount of yogurt. This ratio can be adjusted to your taste: for sweeter yogurt, increase the condensed milk; for less sweet yogurt, increase the fresh milk. Note: Use pasteurized fresh milk or boiled fresh milk to ensure food safety and use good quality yogurt starter for successful fermentation.
  • You should strain the yogurt mixture through a sieve for a smoother final product.
  • When stirring the ingredients, stir in only one direction.
  • The maximum incubation time for yogurt is 8 hours; incubating for too long will affect the sourness. Besides, the incubation temperature should be maintained at 40 degrees Celsius.
  • If you want to make sugar-free or low-sugar yogurt, you can substitute sugar-free ingredients and reduce the amount of condensed milk.
